One day I discovered that I really like puree from the acorn squash as a nice little dessert because the acorn squash is quite sweet. So I decided that I will have it not too seldom at my menu.

Quick Spaghetti Squash with Rosemary and Dried Tomatoes
This is my quick spaghetti squash recipe if I am short in time. But – yes, there is a “but” – the spaghetti squash should be thawed already. During the squash season I freeze one or two roasted spaghetti squashes as I usually don’t need a whole one. So I thaw the leftovers when needed.
Roasted Butternut Squash and Chicken with Sage
I often use butternut squash because it is just easy to prepare. You can peel it with a peeler. This is no effort at all.
Be careful with the sage if you do not know whether you like the taste or not. In this case I would say: Less is more.
Roasted Delicata Squash with Sage and Rosemary
Roasted delicata squash has a nice, not too sweet taste. I like to serve it with Greek yogurt combined with lime juice and dried mint. It goes very well with the delicata! Yum!
Hokkaido Stuffed with Mushrooms
As I couldn’t find an organic acorn squash I decided for Hokkaido. And I skip the rice from the original recipe. For me a perfect choice.
Pumpkin Pancakes
This is my favorite dish on a lazy Sunday. It is perfect! Especially when the weather is foggy and cold. Your place will smell lovely and warm. And so will taste these pancakes, too.

Pumpkin Bread
For me it is more a cake instead of a bread. Nonetheless I do like it for breakfast from time to time. It comes with less gluten. Who needs to avoid it completely replace the spelt flour with a gluten free alternative and choose a gluten free baking powder.
Roasted Squash with Rosemary and Red Onions
I love the squash season. This recipe is tasty, hearty and easily done. Just roast the squash in the oven with rosemary and red onions. Serve with yogurt, meat or eggs – whatever you prefer.
Spaghetti Squash with Hazelnuts, Almonds and Parsley
Unfortunately the squash needs quite a while to roast. But for me it is worth it. That’s why I like to recommend this recipe.
As this squash has not the typical squash-flavor (in my opinion) this recipe could be doable for people who do not like squash that much.
Butternut Squash
Nothing easier than preparing a butternut squash. The shell is so soft that you can remove it with a peeler. Halve the squash lengthwise, remove the kernels, prep the flesh as needed.
Pumpkin Bread with Sage
More pumpkin because it is in season. And I will not miss to try as much recipes as I can. This pumpkin bread I would say is the best I tested, even if it tastes more like a cake.
Acorn Squash Puree
The puree works well for soups. But I like it best as a little dessert.
In squash season I prepare a couple of servings and freeze them. So I can make use of the puree after season, too.
